My mothers cheesy potatoes are a “must have dish” at every large family gathering.
Just a few months ago at our annual Malone Family Round-Up-everyone was anxiously awaiting dinner. We had all been working hard on our cattle ranch, Ridin’ Ropin’ Wrestlin’ and Brandin’ cattle. We all expected to eat my mothers cheesy potato dish, and were extremely happy to find that she upheld our hopes and dreams to eat this satisfying dish for the millionth time. As everyone was going through the line, my brother and I graciously let the rest of our family members and guests go ahead of us. Since we were the last ones to go through the line, we feared the cheesy potato dishes would be emptied. To our surprise we were slowly approaching them and there were still some left, until SPLAT-my cousin scooped up the remaining Cheesy Potatoes. As tears were literally welling up in my eyes, my brother and I looked at one another both with distressed faces- I scurried off to my mom, asked with my quivering voice, “Did you make anymore cheesy potatoes? The two dishes are gone.”
She looked at me, saw how distrought I was, and said, “Yes, I still have one more dish in the freezer.” The day was saved, and this 22 year old self was saved by the delicious-melt-in-your- mouth cheesy potatoes.
As you can see-these potatoes are the homemade dinner fix that everyone needs in their lives. Better yet-it is probably the easiest thing to make!
Ingredients:
2 lb (32 oz) bag of frozen hash brown potatoes (The cubed kind)
1 Cup Sour Cream
1 Can of Cream of Chicken Soup
2 Cups of shredded Cheddar Cheese
Pepper to taste
Directions:
1. Preheat the oven to 350. Lightly mist a 9 x 13 baking dish with cooking spray and set aside.
2. In a large bowl, combine all the ingredients, stir until thoroughly until combined.
3. Pour the mixture into the prepared baking dish and spread evenly.
4. Bake for one hour until potatoes are cooked through.
