To Finland with Love

There once lived a girl named Meredith. One day she met a boy named Scott and after several memories of laughter, joy, and merriment these two people decided to marry one another.  On November 16th, this couple stated their vows and said “I Do.”

What seperates this couple from others is there remarkable love story. Despite only being married for six days, they have already been on a new journey. Recently, Meredith shipped herself off to Graduate school, but not in the states, or even somewhere in Europe, instead she choose to study in Finland! With that came a loyal companion, and husband to-be, Scott. Together they will spend their first year of marriage in a very cold and wintery wonderland called Finland. The most challenging aspects of life to come ahead, where Meredith and Scott will have to learn how to cope with Finland’s freezing temperatures, little sunlight, school, home-sickness, new language, and of course learning how to live together. As scary as some of these seems, these two are very spirited and level headed, anxiously awaiting their new journey!

Congrats Meredith and Scott, and  as the Finnish would say,  “Onnea!” (Congrats!)

Sparkles, Fluff, and Love

Are you having a super sparkly day? Because Lennon and Rob recently had the sparkliest day of their relationship!

One of our favorite couples Lennon and Rob celebrated their love on October 19th. On this day, they married each other, surrounded by their closest family and friends. Their wedding and reception were both held at the Dallas Scottish Rite, where Lennon’s  fun sense of style manifested. What emerged? A traditional style yet with chic romantic-glam pizzazz. Both the bride and her three flower girls walked down the aisle in beautiful over-the top flowing dresses. The younger girls had fluffy and bouncy feathered skirts, whereas the gorgeous bride Lennon had beautifully layered tulle. On top of that, Lennon selected a jewel encrusted  “H” cake topper  to make her day super sparkly!

Weekly Recipe Wrestler: Peanut Butter Sheet Cake

If you know what is good for you, then you know that an apple a day keeps the doctor away. Well another healthy tip is that butter and sugar a day keeps the doctor away. 🙂

In all seriousness I was craving a peanut butter recipe, so I tried a peanut butter sheet cake. Super simple and extremely delicious, in fact it gets tastier with every bite!

Ingredients:
2 cups all-purpose flour
2 cups white sugar
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup water
3/4 cup butter or margarine, softened
1/2 cup peanut butter
1/4 cup vegetable oil
2 eggs
1/2 cup buttermilk
1 teaspoon vanilla extract

2/3 cup white sugar
1/3 cup evaporated milk
1 tablespoon butter or margarine
1/3 cup chunky (or regular) peanut butter
1/3 cup miniature marshmallows
1/2 teaspoon vanilla extract

Directions:
Preheat the oven to 350 degrees F (175 degrees C).
Grease a 10x15x1 inch jellyroll pan/cookie sheet with raised edges.
In a large bowl, stir together the flour, 2 cups sugar, baking soda and salt.
Set aside.

Combine the water and 3/4 cup of butter in a saucepan, and bring to a boil.
Remove from the heat and stir in 1/2 cup peanut butter and vegetable oil until well blended.
Stir this mixture into the dry ingredients.

Combine the eggs, buttermilk and vanilla; stir into the peanut butter mixture until well blended. Spread the batter evenly in the prepared pan.

Bake for 18 to 26 minutes in the preheated oven. Once it is slightly golden on the edges I would suggest removing it from the oven, or until a toothpick inserted near the center comes out clean.
While the cake bakes, place 2/3 cup sugar, evaporated milk, and butter in a saucepan.

Bring to a boil, stirring constantly. Cook stirring for 2 minutes.
Remove from heat and stir in the peanut butter, marshmallows and vanilla until marshmallows are melted and the mixture is smooth.

Finally spoon the frosting over the warm cake and spread in an even layer. Allow to cool before cutting and serving.

*Tip: This cake can sit out for a few days if it is covered in foil or plastic wrap. Be sure to microwave the slice of cake for about 15-20 seconds before you indulge and it will take FABULOUS!
